For Stuffing Ingredients:

• Oil 2 spoon
• 1 spoon of Jeera
• 1/4 spoon turmeric powder
• 1 spoon Coriander seeds (crushed)
• 1 spoon Saunf
• 1 Green chilly (chopped)
• Onions (1 cup chopped)
• Salt to taste
• 1 spoon Red chilly powder (depends on spice)
• 1 spoon lime juice for tangy
• 2 spoon of Gram flour
• Boiled Potatoes 2 medium size
• 1/2 spoon garam masala
• 1 spoon of Kasuri methi
• 1 spoon of chopped coriander

Method:
• Heat oil in a pan, add jeera and allow it to splutter, add crushed coriander seeds, saunf, and green chillies, Sauté for a minute.
• Add onions and salt, mix properly to remove excess moisture from the onions, cook until they are light pink in color.
• Add boiled potatoes and salt to taste, mix well and lightly smash the potatoes, stir and cook for 4-5 minutes.
• Add red chilly powder, garam masala and kasuri methi , mix well by adding little water boil it and later add gram flour, cook for a minute.
• Cool down the mixture completely, take a large spoonful of mixture and shape into balls.
For making kachori Ingredients:

• Maida 2 cups
• 1 spoon Ajwain powder or chrushed
• Salt as per required
• 2 spoon of Ghee
• Water for kneading
• Aloo Filling shaped in balls
• Oil for frying

Method:

• In a bowl add maida , ajwain, salt and ghee, add water slowly and gradually, knead a semi soft dough. Cover it with a cloth or lid and rest it for few minutes.
• Knead once again after the rest. Divide the dough into equal parts and shape into balls.
• Grease your palm with oil, flatten the dough balls with your palms, shape into cups keeping the centre thick and sides thin.
• Fill the cup with the filling ball and cover it completely by pressing the filling balls in centre and seal it by bringing the ends together.
• Flatten with light hands into a semi thick paratha form like disk.
• Fry them on medium flame for about 10 - 15 minutes or until crisp golden brown.
