Surna Koot


Surna koot is crunchy, crispy fried yam small pieces in to a spicy coconut chutney. Making this recipe you need to apply oil to your hands and take Yam, start peeling its skin once done cut the yam in to small pieces and drop them in vessel filled with water, later take little water add ½ spoon of salt mix it well , take a kadai add oil for frying , once oil is heated slowly drop diced small cubes of yam in it and add little prepared salt solution to it .fry them to crisp golden brown color.

Making Masala:

Meanwhile heat 1 spoon of oil in a frying pan, Add mustard seeds ,Once they start popping, add hing, red chillies and fry for few minutes until you get the aroma. Remove off heat and allow them to cool.Once cooled grind them into a smooth paste with tamarind and fresh grated coconut using little water to form a smooth paste, as the koot is usually thick in consistency. Transfer the ground chutney into a bowl and keep it aside.

For Tempering :

Add 1 spoon of oil , add mustard seed ,curry leaves.

Serving method :

Take a grinded masala, add tempering to it , add fried koot and serve as side dish .
