Kachori Chaat , this Chaat is more famous in Rajasthan and northern parts of India and can say its one of the yummiest chaat in street food.
Method of Preparation :
* Stuffing : Kachori here is made with moong dal ,so soak moong dal for about 2 hours , wash it properly for 2 -3 times ,drain it properly and grind to a coarse paste.
Take a Kadai , pour ghee about 1 spoon , add sounf , jeera , pinch of hing. Saute on low flame until the spices turn aroma. Further add turmeric powder , chilly powder, coriander powder, garam masala, ginger garlic paste ,(add all spices about 1/2 spoon ), salt as per required ,once done with spices now add 4 spoon of besan & roast on low flame until the besan turns aromatic. Add in coarsely ground moong dal. Mix it well until the moong dal is well cooked. Moong dal stuffing is ready. keep aside to cool completely.
* Kachori Preparation : Take a bowl add 2 cup of maida, salt , pour some hot ghee or oil for about 3 spoons and mix well and add water as required . Crumble & mix make sure the dough is smooth. Grease the dough with oil, cover and rest for about half an hour.
* Take a small portion of dough roll it & add moong dal stuffing make it like modak & roll it , Fry them in Low flame in Kadai .
* Green Chutney : In a blender take 1 cup of coriander leaves, half cup mint leaves, ginger garlic paste, green chilly, gram dal , jeera , chaat masala, sugar, salt & pinch of hing , blend smooth adding ½ cup water.
* Tamrind Chutney : Soak tamrind for 4 hours , take its juice ,add jaggery ,jeera powder , chat masala, chilly powder , salt , mix it well .
Serving Method :
Take 2 kachories break them in to pieces , pour some curd about 2 spoons, tamarind chutney, green chutney, jeera powder, chilly powder, chaat masala, salt, chopped onions and tomato, sprinkle sev or farshan over it, garnish with corinader leaves and serve kachori chaat along with garma garam tea.
