Dum Aloo is a potato based dish, it is usually made in the North Indian States . These potatoes are usually smaller ones, which are first deep fried or boiled and friied, then cooked slowly at low flame in a gravy with spices.
Method for preparing :
Take a kadai, add 2 spoons of oil along with cumin seeds. Once they splutter, add prepared blended masala paste(onion ,tomato, dry chilly , cashew, ginger garlic paste fry them in oil and once cooled add them in blender and make a smooth paste) and fry them for few minutes . After frying add spices like chilly powder, turmeric powder, coriander powder, cumin powder and salt as per required and fry it till oil separates.
Turn the flame to low and add 1 spoon of curd (because once curd is added in high flame gravy may taste bitter) give a good mix.
Add 1 cup of water or as required to adjust the consistency. Finally, add fried aloos(boil aloos in cooker and later peel of its skin and poke it with tooth pick and fry them in pan with little oil, turmeric powder, chilly powder, salt,hing) and cook for about 20-25 minutes.
Finally add some crushed kasuri methi. Garnish with chopped coriander leaves and serve dum aloo hot with rice, chapathi, puri , roti or naan.
