Hi friends thought to share one of the famous street food that is vada pav ,specially during rainy season people love to have it when its served hot along with masala chai . During this lockdown people cannot go outside to have them , many are missing these of food since long time . Its too risky to go out , friends please stay home and donot worry you can prepare this vadapav at home. As pav easily you get it in grocery or bakery , lets see step by step what is required to prepare this yummy vadapav
1. Preparation of Garlic Coconut Chutney
This is a dry chutney made with garlic, coconut and red chilly powder. It is supposed to be quite spicy and one of the main chutneys for vada pav. (please check the spice level while preparing )
lets see the method of preparing it :
* Heat 2 spoons of oil in a pan on low flame.
* Then add garlic cloves around 5-6 and fry them for 1-2 minutes until garlic turns slightly brown in color.
* To the same pan, add freshly grated coconut(1 cup), Cook for 3 minutes until coconut color changes its color to light brown keep on stirring else coconut may stick to pan
* Once the garlic and coconut are cool enough transfer them to mixer adding chilly powder to it .
* Note do not add water .
2. Preparation of Green Chutney
This chutney is famous in all chats , can be served with dosa . its made with coriander leaves, green chilly, garlic, jeera, ginger , hing , salt and tamarind .I also added a little sugar to the chutney which is completely optional. some add mint for flavour but its completely optional .
lets see the method of preparing it :
* To a mixer add coriander leaves , green chilly, ginger, garlic, jeera , salt, sugar and lime tamarind , add water as needed.
* Blend it to a fine paste .
3. Preparation of Tamarind Chutney
Tamarind chutney is traditionally made by soaking the tamarind in water and then cooking the pulp with spices and water.
lets see the method of preparing it :
* Tamarind paste(soaked in water)squeezing it and removing it grinding it to fine paste , jaggery, sugar, salt, red chilly powder, chat masala add these all and mix it .
4. Preparation of making Vada
* Vada is made by deep frying potato balls. Have you heard batata vada same recipe here it applies , So now you start the process by boiling the potatoes.
* Then once the potatoes are boiled, you mash them and then temper the mashed potatoes with mustard seeds, turmeric powder , green chilly , salt, hing and curry leaves.
* Then make balls out of the potato mixture and then fry them in hot oil after coating them in a gram flour batter.
* To make the batter, take besan in a large bowl. Add turmeric, salt and pinch of baking soda to it.
* Add Water a required .
* Mix it properly , no lumps should be formed. The batter should neither be thick nor thin.
* Heat oil in a kadai , keep the flame low .
* Dip each potato round into the batter, coat it from all sides.
* Then drop it carefully into the hot oil.(note : donot throw the vada in the oil , hot oil may fall on you)
* Fry the vada in hot oil until golden brown in color.
5. Arranging Vada Pav
Then slice each pav but not entirely. It should be attached to one end it should be like folding , On the white part of pav apply green chutney on one side and tamarind chutney on the other side . Then apply garlic chutney on top of these chutneys. Place the fried vada in the center. Serve the vada pav immediately with garlic curtney chutney , fried salted green chilly on the side!
As you can see there are multiple steps here and if you don’t have time to do all of these on one day, I suggest making the chutneys in advance. This way, you only have to make the vada when you want to eat.It will Save so much time! The chutneys will not get spoil for many days if you store it in refrigerator .
