Tendle Talasani


Tendle Talasani is a konkani side dish it is also called as tendle stiry fry also , specially when you prepare dal and rice you can prepare this , time required to prepare this is 30 minutes , serves for 3 , Do try and share us your experience

Ingredients :

* Tendle/Ivy gourd – 250 grams 
* Byadagi Red chillies  2 to 3(please check spice level , if its spicy it will taste yumm)
*  Oil – 2 tablespoons 
* Garlic – 7 to 8 cloves 
* Salt as per required


Instructions  : 


* Wash tendle/ivy gourds , remove the ends and crush them slightly using bowl or hammer . 
* Add salt to these crushed tendle/ivy gourds and keep it aside. 
* Chop the chillies, Peel the garlic cloves. Crush the garlic cloves 
* In a pan, heat oil, add crushed garlic and fry them till golden brown. 
* Then add chopped red chillies and sauté them too.
*  Now add crushed tendle/ivy gourds and mix well.
* Just sprinkle some water and let it cook covered on  medium flame. 
* Sprinkle some more water if necessary to cook the gourds. 
* They should be soft but should not lose shape. 
* Once all water has evaporated, mix them until slightly crisp. 
* Remove from fire. Tendle Talasni is good to serve with rice, dal and papad.

note : 
1. If you like it spicy, increase the number of chillies and also the oil to fry. Tendle tastes great when made spicy. 
2. Use only very tender fresh tendle; ripened tendle will not be good for talasani.
