Onion fritters (piyavu vodi or neerulli sandige)
Hi friends today I am sharing one of my favorite recipe which is usually done during summer because it requires maximum 4-5 days of sunlight , this recipe requires a lot of patience and this recipe is done during night so that batter is applied on sheets next day morning , all the ingredients are easily available at our home , it is served with rice and dal , once it is fried you can store them in air tight container , i am sharing this recipe the quantity would be for 10 serve for a day ,beginners don’t panic its easy and be in patience while cooking so lets begin
Ingredients used
:
*Rice – 2 cups(rice can be used dosa rice or normal
eating rice also )
* Chilly powder – 8 spoons (I have used byadagi chilly
powder )
* Salt as required
* Water 10cups –(measurement : 1 cup rice = 5 cup
water )
* Sabudana (optional few use them I did not use )
*Onion -1
*Oil for frying
Method of preparing :
*Wash rice for 3-4 times and soak it for 4 hours .
*After 4 hours drain water , add little by little rice , chilly powder,
salt and grind them it should not be thick , its consistency should be like
neer dosa batter.
* Take thick vessel or you can use steamer vessel or this type of vessel ,
add batter and keep it on the gas flame .
*Flame should be medium and you need to mix the batter
continuously lumps should not be formed .
* I know for beginners its difficult if you find any
lumps don’t panic try to break them and keep on stirring until and unless the
batter gets big bubbles .
* Don’t increase the flame for bubbles see to it that
batter doesnot stick the base of vessel.
*Once the bubbles come it means its cooked good , switch
off the flame and keep the vessel aside .
*Never ever taste batter after its cooked because you
may hurt your tongue due to excess of heat it may burn your tongue also.
*Next day morning dice the onion in to small pieces
and now its time to check the taste of batter u can add salt and chilly powder
according to your taste .
*Mix the onion in that batter , if you find batter is
thick you can add little water to it .
* Note : morning no need to heat the batter again
*Once done take sheet (you can use plastic rice bag or
large plastic bag) and drop them little by little on the sheet
*Apply stones at the side of sheets if its plastic due
to air it may fly away and if you are keeping outside in your balcony please
cover with cloth during night due to dews Vodis may spoil .
